- Pork side (The cut used for bacon)
- Your choice of all-purpose rub (Spice blend)
- Oil
- Maple syrup
- Butter
- BBQ sauce
- Whiskey or Noroi maple liqueur
- A smoker or BBQ with added wood for smoking
As you are astute, you may have noticed the absence of quantities in the ingredients. Go by feel, because that’s BBQ for you.
- Light up your charcoal extra to set your BBQ/Smoker at 250°F.
- Cut the pork side into 1 1/2” – 2” cubes.
- In a bowl or pan, drizzle a bit of oil over the cubes.
- Evenly coat the cubes with the rub and place them on the cooking grate.
- Cook for approximately 2 to 2:30 hours until the exterior is very crispy, usually around 165-170°F.
- You can spray a liquid every 35-40 minutes during the cooking. The classic mixture is 3 parts apple juice and 1 part apple cider vinegar. This will help create the “bark.”
- Place the cubes in a pan and add maple syrup, whiskey, butter, and BBQ sauce.
- Mix well.
- Return to the BBQ for about 1 hour to thicken the sauce, stirring every 15 minutes. The final internal temperature should be around 207-210°F.
